Stuffed Vegetables

Ever since my daughter changed schools, I have been having a tough time. The school provides her a lovely lunch and so now I am left to cooking lunches only for myself. If you are not aware, the most boring thing ever is cooking for one. So my strategy is to plan my blog posts for my lunch to give me some motivation and enthusiasm to cook.

So when I had to do stuffed dishes and also clear out my refrigerator, I came up with these filling and delicious stuffed capsicum and tomatoes. They worked as a sumptuous lunch for me.

Serves 1-2

WHAT WE NEED

1 Capsicum, medium

2 Tomatoes, medium

1 small bunch spinach

1/3 cup Golden corn

2 tsp All purpose flour / whole wheat flour

1 tbsp Butter, salted or unsalted

1 cup Milk

2 tsp Garlic / other seasoning

Salt

Olive oil

WHAT TO DO

  • Wash the spinach well and cut into small parts
  • Heat 1 tsp olive oil or any other oil in a pan
  • Add the spinach and corn and sauté till the spinach wilts
  • Simmer and sauté till the water from the spinach dries up and the corn and spinach are cooked, around 4 minutes and set aside
  • Heat butter in the same pan
  • Once it melts, add the flour and whisk well till the mixture is of a sandy / grainy consistency
  • Add the milk, salt and garlic seasoning and whisk well
  • Whisk for 4-5 minutes till the mixture starts thickening and the white sauce is cooked well
  • Ensure the sauce is not too runny since it needs to be filled in
  • Add the spinach and corn to the sauce and mix well
  • Check and adjust for salt
  • Preheat the oven to 200C
  • Cut the capsicum in half and deseed it completely
  • Cut a small slice of the tomato from the top and deseed it carefully to ensure it does not break or come apart
  • Brush the capsicum and tomato with olive oil
  • Fill all the 4 pieces with the spinach mixture completely
  • Bake it for 10-12 minutes
  • The tomatoes will take around 6-7 minutes. You can take the tomatoes out of the oven and continue to bake the capsicum after that for 10-12 minutes
  • You can also add grated cheese as a garnish
  • Serve warm
  • Enjoy!

NOTES

  1. Instead of baking you can also cook it on a pan on the stovetop. In that case you would need more oil and it would take around 15 minutes

    Cooking for the blog during lunch is great idea. Anything that I know husband would not appreciate, I cook for my lunch! Oh, the other stuffed vegetable is tomato!! I assumed both were bell peppers; green and red. Filling is creamy even without addition of cheese. Looks delicious!!

    My lunch is my son’s back from school meal, so there is some motivation in cooking. Otherwise it’s a pain to just cook for oneself. Smart idea to plan your meals around BM themes, two birds with one stone 🙂 That meal is delicious, by the way

    Cooking for one is definitely boring and I do away with leftovers from previous night if it is only me. The stuffing here is quite interesting and I usually see either potato or cheese based ones.
