Chocochip Cookies

I had to check my blog multiple times to confirm I had not posted this chocochip cookies before. I have made these cookies so many times and everyone who has tasted them has fallen in love. The search for an eggless version is on but sadly I am yet to get such a chewy and delicious version without eggs. The plan is to keep trying and hope for the best. Fingers crossed!

Why I like this dish?

These chocochip cookies are chewy and tasty and it is very hard to eat just one. You can replace the chocochips with chunks of your favorite chocolate. You can make the dough on the previous day and bake the next day to get fresh from the oven chocochip cookies. The best part was my friend who declared she would no longer eat chocochip cookies from any store and would only eat these. What more do I need to make me ecstatic!

Makes 16 medium sized cookies

WHAT WE NEED

113 gms Unsalted butter at room temperature

75 gms White sugar

80 gms Brown sugar

1 egg

1 tsp Vanilla

140 gms All purpose flour

1/2 tsp Baking soda

1/4 tsp Baking powder

1/4 tsp Salt

135 gms Chocochips

WHAT TO DO

  • Line a baking tray with parchmentIn a large bowl, beat the butter till smooth, around 1-2 minutes
  • Add granulated white sugar, brown sugar and vanilla and beat till the mixture is fluffy, around 2 minutes
  • Add the egg and beat for a minute
  • Mix the flour, baking soda, baking powder and salt in another bowl
  • Combine the flour mix with the sugar mix 
  • Add the chocochip and fold them into the dough
  • Make 16 balls and arrange them well apart on the baking tray since the cookies will spread when baked
  • Cover the tray and refrigerate overnight
  • Preheat the oven to 190C
  • Bake the cookies for 12-14 minutes till the edges are golden brown and the centre is soft
  • Cool completely before serving
  • Enjoy!

NOTES

  1. You can skip the step of refrigeration. In that case, your cookies should bake in 11-12 minutes
  2. You can replace the chocochip with chunks of your favorite chocolate
