I love making small breads and buns. They make for a wonderful snack with some tea in the evening. These spicy buns are easy to make and taste delicious with or without a dip on the side. These are made with yeast and so it should be ready in a couple of hours. You can make it ahead and then just warm it up a bit before serving.
Why I love these spicy buns?
Like I said, they are easy to make. All the ingredients are usually readily available in the pantry. You can mix the dough and wrap it up quickly. It can be varied to suit tastes of different people and appeal to kids and adults alike.
Substitutions and Variations
- As always, let me tackle the flour first. You can make these spicy buns with whole wheat flour instead of all purpose flour but I would recommend a half and half instead of a full substitution. Increase the amount of liquid if you are using whole wheat flour.
- You can substitute the milk with water. Again, I would recommend at least half milk because that makes the buns soft. If you do not have milk add 25gms of milk powder
- Instant yeast can be substituted with active dry yeast. In that case, you need to mix the active dry yeast with water and 1/2 tsp sugar for 5 minutes and wait for it to froth up before adding it to the flour and other ingredients.
- I have used curry leaves, coriander and green chillies. You can substitute it with any mixture of your choice. Some mint chutney or some pickle would also taste amazing in these spicy buns

Spicy Buns
Tasty and flavourful buns which make for a delicious evening snack
- OTG or MIcrowave Oven to bake
- 300 gms All purpose flour
- 3-4 gms Instant yeast
- 15 gms Unsalted butter
- 160 gms Milk
- 1 tsp Salt
- 3 tsp Mix of curry leaves, fresh coriander & green chillies
Blend the curry leaves, fresh coriander and green chillies into a smooth paste using little water
In a large bowl add the flour, yeast, butter, milk, salt and the curry leaves mixture
Knead the mixture into a smooth dough for about 5-10 minutes
Cover and set aside for an hour or till the dough doubles in volume
Take the dough and divide it into 8 parts
Take each portion of the dough and roll it into a ball
Preheat the oven to 200C
Line a baking tray with parchment and place the dough balls on it
Cover and set aside for 15-20 minutes
Bake for 15 minutes or till the buns start turning brown
Cool for 5-10 minutes and serve warm with you favourite dip
