Creamy Carrot Sandwich

I don’t know about you but in my house, the carrot gets a bit of a step-motherly treatment. I take it for granted, don’t give it too much of importance, use it as a filler in combination with other vegetables and its presence solely dependent on the quantity needed and never stopping to consider its feelings. Basically, it always plays a supporting role and never gets its due limelight.  So when I picked this theme of one vegetable in three ways, I figured it would be nice to hero the carrot for once.

Since the husband is travelling I am having a dairy overflow – too much curd and too much milk. So, I figured I could make some hung curd and have a fabulous sandwich with it. It turned out creamy and delicious with the daughter happily munching away and I have been patting my back ever since.

Serves 2

8 slices of bread

1 carrot, grated

Hung curd from 1/2 litre curd

1 tsp chilly powder / curry powder / mixed dried herbs

Butter to toast the bread

  • Toast the bread slices with butter
  • In a bowl, mix together the hung curd, grated carrot, spice powder and salt
  • Apply the carrot mixture on a slice of bread generously and cover it with another slice
  • Repeat the same for the remaining bread slices
  • Enjoy!

  1. Though it is not mandatory to toast the bread, it is recommended because the bread otherwise is unable to hold it together and gets soggy due to the hung curd

This is my post for the Blogging Marathon under the theme, ‘One vegetable three ways’.

  1. Haha I love the way you described …bechare carrot pe julm ho raha ho jaise….jokes apart…lovely creamy carrot sandwich…they sure do taste awesome

  2. The shredded raw carrot must have added a nice crunch to the sandwich. I love recipes like these where all the flavor comes from the main ingredient.

  3. Sowmya thanks for reminding of this recipe, using carrot and hung yogurt as a sandwich filler. I used to make this often with some coriander or mint for the kids and hubby when they were taking packed lunches to school and work. Now I’ve really forgotten all the fillings I use to make. Carrot sandwiches taste really delicious.

  4. I love the creaminess the hung curds give to sandwiches..guess most of us tend to forget carrots somehow. I too end up doing it and feel bad!..this is an excellent way to use the carrots.

  5. Hehe somehow I agree that carrots are always sidelined… in my house, it gets eaten more raw than when cooked, so I really don’t bother to cook them much. This sandwich sounds delicious and a good lunch box idea, sure my girls will love it… thanks for sharing…

  6. Carrots are neglected even in my house Sowmya. Only my daughter and I enjoy carrot in various forms, but the men in the house despise it (gajar halwa, being an exception). This creamy carrot sandwich sounds absolutely delicious. I would love to try it some time soon.
