Fried Rice

This veg fried rice is one of my favourite rice dishes and I end up making it very often. It is a nice way to get the daughter to eat vegetables without much fuss and it is an easy dish to make.

Serves 2-3

WHAT WE NEED

1 cup Basmati Rice

4 cups Water

1 1/2 cups Mixed vegetables (carrot, French beans, capsicum, baby corn and cabbage)

1/3 Cup Spring onion plus additional for garnish

4 cloves garlic, finely chopped

1″ Ginger, finely chopped

3 tsp Soy sauce

1 tsp Vinegar

1/2 tsp Black pepper

2-3 tbsp Oil

Water

Salt

WHAT TO DO

  • Soak the basmati rice for 30 mins
  • Chop all the vegetables finely and set aside
  • In a deep bottom pan, add 4 cups water, salt and few drops of oil and bring to boil
  • Once it boils, drain and add the rice and let it cook till al dente
  • Drain the water and set aside the rice
  • In a pan, heat 21/2 tsp oil and add the spring onion and fry for a minute on low flame
  • Add the vegetables and cook on high flame for 4-5 minutes while constantly stirring
  • Add the soy sauce, vinegar and salt to the pan
  • Add the rice and toss to mix well with the vegetables
  • Serve warm with veg manchurianΒ baby corn manchurian or paneer manchurian
  • Enjoy!
