I knew I needed an Egg pulao kind of dish for the letter E since it has so many options and makes for a flavorful dish. This Egg pulao is so quick and easy to make and is specially useful when you have guests over and need a quick fix. It also helps to give a good protein rich dinner without being too heavy on the stomach.

Serves 3
WHAT WE NEED
For eggs
3 Eggs, hard boiled
3 tsp Ghee / Clarified butter
1/4 tsp Red chilly powder
1/4 tsp Peppercorns, freshly ground / crushed
For Pulao
1 cup Basmati Rice
1/3 cup Onion, finely chopped
1/3 cup Tomato, chopped
2 tsp Ginger garlic paste
2 Green chillies
1/3 cup Curds / yogurt
2 tbsp Mint leaves, finely chopped
2 tbsp Fresh coriander, finely chopped
1/2 tsp Cumin seeds
3 Green cardamom
1″ Cinnamon
1 Bay leaf
1 Star anise
1 tsp Peppercorns, freshly crushed
1/4 tsp Turmeric powder
2 tbsp Ghee / Clarified butter
WHAT TO DO
- Soak the basmati rice for 30 minutes
- In a pan , heat 2 tsp ghee and add the hard boiled and peeled eggs
- Add salt, red chilly powder and crushed peppercorns and fry
- Once the eggs get a nice golden brown crsip coat to it, take it off the heat and set aside
- In the same pan, add 2 tsp ghee
- Add cumin seeds, cardamom, cinnamon, star anise and bay leaf
- After a minute, add the ginger garlic paste and let it cook for a minute on low heat
- Add the chopped onions and green chillies and fry till the onion is translucent
- Add the chopped tomatoes and cook till the tomatoes turn mushy
- Add the curds and cook on low heat for 1-2 minutes
- Add the mint and coriander and mix well
- Drain and add the basmati rice and 2 cups water to the pan
- Add salt and mix well
- Cover and cook till the rice is 80% done
- Make slits on the egg and add it to the pan and let the rice cook completely
- Add more water, if required
- Garnish with fresh coriander
- Serve hot with any raita of your choice
- Enjoy!

Even though I do not at eggs I always read the recipes and try to convert them . I normally replace the boiled eggs with potatoes and the omelette with besan . It’s rather interesting to substitute .
