Coriander & Corn Rice

Today’s dish is a simple and tasty coriander rice with corn and coconut. That’s way too many C for one dish but that’s today’s alphabet and so totally justified. This is quick cook because there is very little chopping of vegetables involved and that is what takes all the time.

I usually make this when the husband is travelling and I have to cook just for the daughter and me. You can cook all the different elements of this coriander rice at the same time and then just mix them all together for a satisfying and wholesome meal.

Serves 3

WHAT WE NEED

1 cup Rice

1/2 cup Fresh coriander

3 tbsp Grated coconut

1-2 Green chillies

1″ Ginger

1/2 tsp Cumin seeds

1 Onion, medium, finely chopped

2 Potatoes, medium, boiled, peeled & cubed

1/4 cup Golden corn, boiled

1 tbsp Oil

Water

Salt

 

WHAT TO DO

  • Cook the rice separately as usually done and set aside to cool
  • Grind together the fresh coriander, coconut, green chillies and ginger to a paste using little water
  • Heat a pan and add oil to it
  • Add the cumin seeds and chopped onions
  • Once the onion is translucent, add the coriander paste and cook it for 3-4 minutes
  • Constantly stir the mixture to ensure it does not stick to the pan
  • Add the potatoes and corn and mix well
  • Add the rice and salt and mix well
  • Cook for 3-4 minutes on low heat
  • Serve warm with cucumber raita
  • Enjoy!
