Today’s dish is a simple and tasty coriander rice with corn and coconut. That’s way too many C for one dish but that’s today’s alphabet and so totally justified. This is quick cook because there is very little chopping of vegetables involved and that is what takes all the time.

I usually make this when the husband is travelling and I have to cook just for the daughter and me. You can cook all the different elements of this coriander rice at the same time and then just mix them all together for a satisfying and wholesome meal.

  1. What a wonderful combination with coriander and corn. The rice must have tasted so delicious with coriander and the crunch from corn.

  2. That is definitely a flavorful combination. Coriander leaves and coconut and corn all my favorites. I am sure my kids will love it as well.
