Quick 3 ingredient Cookies

Today is just the right day to post about some easy and delicious cookies. These quick cookies can be made in less than an hour and can be fancied up if that is what you want. It is a lovely recipe for a base cookie and can be modified to suit your preferences every now and then. All you need are butter, sugar and flour. Since we all have these ingredients in the pantry always, you can rustle them up whenever you feel like.

Types of cookies

Well there are may types of cookies but I like to divide them basically into the quick easy cookies and those with multiple ingredients. The quick cookies usually have only butter, flour, sugar and some other flavours. These can be mixed by hand into a dough and shaped into cookies. The other variety are the ones which need egg, baking soda and multiple other ingredients and a slightly more complex procedure. While they give a nice chewy texture to the cookies, they need a bit of planning. Usually I get sudden cookie cravings and I find it tedious to go hunting for ingredients. So I usually fall back to the simple basic butterly delights such as this one.

In fact, this cookie started out when I wanted some oatmeal raisin cookies. I did not have eggs on hand and a couple of other ingredients. So I settled for this one when I made a quick batch with my daughter. In fact this recipe is so easy that she did most of the recipe while I just hung around giving her unnecessary instructions.

I have adapted this recipe from King Arthur Flour. They had a fancier version with jam scooped on top. But these quick cookies were so delicious and melt in the mouth awesome by themselves. So I decided against adding the topping.

Easy 3 Ingredient Cookies

An easy 3 ingredient cookie recipe that can be made with pantry staples

  • 30 gms Confectioner's Sugar / Icing Sugar
  • 56 gms Butter (salted / unsalted) at room temperature
  • 60 gms All purpose flour
  • Pinch of Salt
  1. Preheat the oven to 175C

  2. Take the confectioner's sugar and butter in a bowl and mix to a smooth mixture. Add a pinch of salt if you are using unsalted butter

  3. Add the flour to the mixture and combine all to form a smooth dough

  4. Divide the dough into 8 pieces. If you want smaller sized cookies, you can divide the dough into 10 pieces. Shape each piece into a smooth ball

  5. Place each of the dough ball on a baking tray lined with parchment. Keep them atleast an inch apart from each other because these cookies will spread

  6. Bake them for 10-12 minutes till the edges start to turn brown

  7. Let the cookies cool on the baking tray for 10-15 minutes. Then transfer to a wire rack for around 30 minutes.
