Spicy Honey Dip

When I signed up for this month’s Blogging Marathon and picked this theme of ‘Condiments’, my first plan was to finally make and post the ‘Dukkah’, an Egyptian spice blend that is used as a dip along with with olive oil for bread. But then I swayed towards hung curds and have been immersed in it ever since.

I figured I would complete the hung curd in my fridge as well as a trio of hung curd dips and leave the Dukkah for another day. That also gives me a reason to bake another loaf of bread!

I adapted this recipe from the book, ‘Diva Green’ by Ritu Dalmia which has some fabulous vegetarian recipes written in a simple style. I didn’t have Tabasco sauce and red chillies and so they were substituted. Also I played around with the proportions till I got a lovely sweet and spicy flavour rolled in one dip.

WHAT WE NEED

60 gms Hung curd

12 gms Honey

1 tsp Sesame seeds

1 small green chilly

1 tsp Hot & sour sauce

Pinch of ground peppercorns

Salt

WHAT TO DO

  • Add all the ingredients into a blender jar
  • Blend to a smooth dip
  • Else, you can also mix the ingredients by hand to get a comparatively coarse dip
  • Enjoy!

Spicy Hung Curd Dip

There are times when I get very hung up on certain dishes and ingredients and keep repeating them so often that the husband and daughter finally do an intervention only for me to get obsessed over the next dish. Now it is the hung cure time. I keep straining the curd in the cheesecloth and then hunt around for a recipe to use it up.

And is it not the perfect time to be hung up on hung curd when I have a ‘Condiments’ theme for the Blogging Marathon this week. This is a quick dip that only needs few basic ingredients always available at home and a blender. This dip works with chips as well as vegetables and is a nice one to have handy for guests.

WHAT WE NEED

1/4 cup Hung curds

2 Tomatoes, medium

1/2 tsp Curry powder

Pinch of Red chilly powder

Salt

WHAT TO DO

  • Chop the tomatoes roughly
  • Add it along with all the ingredients to a blender jar
  • Blend it to a smooth consistency
  • Enjoy with carrots or chips!

NOTES

  1. To make hung curd, add some regular homemade or store bought curds to a cheesecloth or kitchen towel. Tie the cloth and hang it over a vessel. The end of the cloth should not touch the bottom of the vessel to ensure the whey doesn’t go back into the curds. Keep it in the fridge for 24 hours and hung curd is ready for use

Chocolate Chia Overnight Oats

Overnight oats is another item that has been on my to-do list forever. I am so glad that I finally got to tick it off. I have been trying various combinations with it and most of them have been quite successful. Whenever I have these oats for breakfast, I don’t feel hungry for longer hours and is perfect for rush mornings. The dish for today has cocoa and chia seeds with a splash of honey, dash of nutmeg soaked in milk and topped with bananas. I tried a similar dish with coconut milk instead of regular milk and that was delicious as well.

Protein – Oats

Serves 1-2

WHAT WE NEED

Rolled oats                    3/4 cup

Milk                                1 cup

Cocoa powder               2 tbsp

Nutmeg                           1 tsp

Chia seeds                      1 1/2 tbsp

Banana                            1

 

WHAT TO DO

  • Mix all the ingredients except bananas in a jar
  • Cover it and refrigerate overnight
  • Add additional milk in the morning if the oats has become too thick
  • Top it with banana slices
  • Enjoy!

Labneh

The third and final dish of the Lebanese cuisine theme is Labneh which stands testimony to the fact that not all awesome dishes need to have a tough recipe. Labneh is seen as Lebanese cream cheese and is just as thick and creamy. And all you need to make yourself a batch of labneh is patience – lots of it. This is a no cook recipe and so it is very easy. But if you need a batch of labneh today, you need to have started making it two days ago. Yes, it takes that long but we know it is quite worth the wait.

Makes one bowl of labneh

WHAT WE NEED

Greek yogurt / thick curds                500gms

Fresh lemon juice                               1/4 tsp

Salt                                                          a pinch

Zaatar powder                                      1 tbsp

Olive oil                                                  2-3 tbsp
WHAT TO DO

  • Take a cheesecloth and line it over a bowl
  • In another bowl, mix the yogurt, lemon juice and salt
  • Transfer the yogurt mixture onto the cheesecloth
  • Tie up the cheesecloth over a ladle or large spoon such that the cheesecloth does not touch the bottom of the bowl similar to how it is done to obtain hung curd
  • This ensures that the whey drained from the yogurt will not find its way back into the cheesecloth
  • Keep the yogurt with the bowl in the refrigerator for around 24 hours
  • After 12 hours, check the bowl and pour the whey out of the bowl 
  • After 24 hours, transfer the hung curd mixture to a bowl
  • Add the olive oil and zaatar powder
  • Serve cold with vegetable slices or warm pita bread
  • Enjoy!

Ugadi Pachadi

My father had warned me years ago that if I watch movies at the rate I was watching, soon there would be no more movies for me to watch. I scoffed at him with all the disdain of a twenty something who knew better than her parents. But the thirties of your life teaches you how right your parents always are and so now I am actually in a situation where I have finished watching almost all Hindi and Tamil movies there are except of course the few I resolutely avoid. This happened sometime last year when I was still in Malaysia and discovered that I had watched every movie on TV. So I had two choices – either I switch to Chinese movies or Telugu movies (just to be be clear – not watching movies is not an option!). I chose the latter because they had subtitles, were comparatively easier to understand since there is a lot in common with Tamil and Hindi and the heroes look awesome. It was mostly the last reason but come on!

Since I started watching Telugu movies, I became interested in the Andhra cuisine too and started watching telugu cookery shows to improve my understanding of the language and discover the cuisine. I discovered the innumerable similarities and differences with Tamil cuisine.So this recipe today is a perfect example of similarities and differences of Andhra and Tamil cuisine. Ugadi Pachadi is made on the occasion of Ugadi which marks the beginning of the year for people in Andhra and Karnataka (two states in the south of India). This dish symbolizes life itself which is sometimes sweet, sometimes sour, sometimes bitter and sometimes spicy and so it has the mixture of ingredients of all the six tastes – sweet, salty, spicy, bitter, sour and pungent.

The main ingredients of this dish are raw mango and jaggery. The Tamil way of making this dish is to cook the raw mango and heat the jaggery till it melts and mix the two. But I am so much in love with the much more simpler no cook Telugu version where all the ingredients are mixed and made into a slightly thick mixture.

Serves 5-6

WHAT WE NEED

Raw mango, large                     1

Jaggery, grated                           1 cup

Tamarind paste                         2 tsp

Red chilly powder                     1/2 tsp

Dried neem flowers                 1 tbsp

Salt

WHAT TO DO

  • Peeling the mango is optional. Deseed and cut the mango into small pieces which will amount to 1 cup.
  • In a large bowl, add the mango pieces, jaggery, tamarind paste, chilly powder, salt and dried neem flowers
  • Mix well to form a thick sauce like consistency. It will take some time for the mixture to come together
  • To speed it up, heat a tava till it is very hot and turn off the gas. Keep the vessel on top of a hot tava to aid the melting of the jaggery. Else keep the bowl in a large vessel of hot water for similar results
  • Enjoy!
