My intention for today’s post was a nicely baked vegetable – potato or sweet potato or some such. But, as always, things did not go to plan and I had to dig some old photos from my draft folder and use them. This is a simple yet delicious chocolate cake. It is very easy to make and is an absolute soft and delicious delight.
It is a layered cake but I halves the recipe and made a simple cake with some chocolate frosting on top.

Makes one 8″*8″ cake
WHAT WE NEED
For the cake
200 gms Granulated sugar
125 gms All purpose flour
35 gms Cocoa powder
3/4 tsp Baking powder
3/4 tsp Baking soda
1/4 tsp Salt
1 Egg
120 ml Coffee or warm water
120 ml Milk, at room temperature
60 ml Oil
1 tsp Vanilla
For the frosting
90 gms Semi sweet chocolate
112 gms Unsalted butter
115 gms Icing sugar / Confectioner’s Sugar
1 tsp Vanilla
WHAT TO DO
- Preheat the oven to 180C
- Line an 8″ square pan with parchment
- In a large bowl, whisk together sugar, flour, cocoa powder, baking soda, baking powder and salt
- In another bowl, whisk together egg, milk, water or coffee, oil and vanilla
- Mix the wet ingredients to the dry ingredients to make a thin batter
- Pour the batter into the pan and bake for 25-28 mins or till the toothpick inserted comes clean
- Remove from the oven and let cool completely on a wire rack before frosting
- For the frosting, melt the chocolate over a bowl of hot water (double boiler method) and set aside to cool
- Beat the butter for a minute with a hand mixer till smooth and creamy
- Add the sugar and beat till they are light and fluffy, around 2 minutes
- Add vanilla and chocolate and beat lightly till fully incorporated
- Then increase the speed and beat till smooth and glossy, around 3 minutes
- Spread the frosting on the top and sides of the cake and smooth it with a offset spatula.
