Onion and Coconut Rice

Greetings from Kodaikanal. The husband decided suddenly that he needs a vacation. So we did last minute bookings as usual and came here. So the dishes for this week are more to do with clearing out the refrigerator and making do with whatever I had available.

As they say necessity is the mother of invention, this onion coconut rice is a necessity driven invention of mine and it tastes wonderful, if I may say so myself. It is a simple dish to cook with grated coconut , fried onions and bright red chillies. I also added some croutons because I had one slice of bread left and thought it would make for a good crunch. The aroma is fantastic and the taste is a nice burst of flavours. As most of my recipes, this is a quick fix and can be rustled up in a jiffy.

Serves 1-2

WHAT WE NEED

1/2 cup Basmati rice / rice

2 tsp Oil

2 tbsp Coconut, grated

2 tbsp Fried onion

1-2 Red chillies

1/2 tsp Cumin seeds

2-3 Garlic cloves (optional)

8-10 Bread croutons (See Notes)

Salt

Water

WHAT TO DO

  • Soak the basmati rice for 15 minutes and drain
  • Cook it as per your usual procedure and set aside to cool
  • In a mixer jar, take grated coconut, fried onions, red chillies and cumin seeds
  • Blend to a coarse powder
  • Heat a pan and add oil
  • Add the onion and coconut powder and fry for 3-4 minutes on medium heat
  • Sauté with a ladle frequently
  • Add the cooked rice and salt
  • Mix well to combine
  • Cook it on low heat for 3-4 minutes
  • Serve warm with papad or raita
  • Enjoy!
