Nei Soru | Ghee Rice

Some dishes are so simple and yet so flavourful, like this Ghee rice or Nei Soru. It is an easy and quick dish to make and the daughter has been raving about it ever since. She wants to eat the ghee rice nearly every day and I am so tempted to give in.

All you need is rice, ghee and some spices. You can garnish it with some cashews that makes it all the more delicious. I made it with basmati rice but you can make it with regular rice as well if you wish.

Serves 1-2

 

WHAT WE NEED

1/2 cup Basmati rice

1 1/2 tbsp Ghee / clarified butter

2-3 Cardamom / Elaichi

1″ Cinnamon stick

2-3 Cloves

1 Star Anise (optional)

1 tsp Ginger garlic paste (optional)

1 Onion, small

5-6 Cashewnuts

 

 

WHAT TO DO

  • Soak the basmati rice in water for 15 minutes
  • Cook it as per your usual method and set aside
  • Heat a pan and add 1 tbsp ghee
  • Once the ghee is hot, add the cardamom, cloves and cinnamon
  • Fry for a minute
  • Slice the onion thinly
  • Add the ginger garlic paste and sliced onion and fry till the onion turns translucent
  • Add the rice to the pan and mix well
  • Let it cook for 2-3 minutes on low heat
  • Fry cashews in 1/2 tsp of ghee till golden brown
  • Add it to the rice
  • Serve warm with any paneer or vegetable curry
  • Enjoy!
