Inji Manga Sadam | Ginger Raw Mango Rice

So I thought long and hard for a rice dish from the alphabet ‘I’. Finally I landed on this quick easy and totally delicious raw mango and ginger rice. Inji is Tamil for ginger and manga is raw mango. This is the mango season and so this raw mango and ginger rice is just in time for you try during the hot Indian summer. It is perfect to make using leftover cooked rice.

I added some peanuts to it to appeal to my daughter and that worked like a charm. You can omit it if you don’t like peanuts. It struck me later that I could have garnished this rice with fried onions which could have added to the crunch element. If you try it, let me know how that turned out.

Serves 3

WHAT WE NEED

1 cup Rice

2 tsp Oil

1/2 tsp Mustard seeds

1 sprig curry leaves

1 tsp Urad dal

2 Green chillies

1 tbsp Peanuts (optional)

1 Raw mango, small, peeled and grated

20 gms Ginger, peeled and grated

1/4 tsp Turmeric powder

Fresh coriander for garnish

Salt

Water

 

WHAT TO DO

  • Cook the rice as per your usual method and set aside
  • In a pan, heat the oil and add the mustard seeds
  • Once the mustard seeds splutter, add the urad dal, green chillies, curry leaves and peanuts
  • When the urad dal starts turning brown, add the grated ginger and raw mango
  • Cook for 4-5 minutes till the mango turns tender
  • Add the cooked rice, turmeric powder and salt
  • Mix well to combine
  • Cook for 2-3 minutes on medium flame
  •  Garnish with fresh coriander
  • Serve warm with chips or raita
  • Enjoy!
