Chimichurri Rice

This is quite late to wish everyone a grand 2019 but in my defense I have been busy with holidays and family reunions and then recovering from the hangovers of the holidays and family reunions. So happy 2019 to everyone. I begin this year, surprisingly, not with a bread recipe which is usually the norm. This is mostly because I have stopped thinking of life in terms of years and planning something for the beginning of one calendar year as if life changes in any way. Maybe I am getting old or maybe wise, but either ways I am not able to look at a new calendar year with any excitement of starting something new and amazing.

On that note, here is the first theme of the Blogging Marathon for this month – Dishes from the southern hemisphere. My first dish is from Argentina – the Chimichurri Rice. This is a simple and flavourful one pot rice dish that can easily be whipped up for a lazy dinner.

Serves 3

WHAT WE NEED

2 tbsp Olive oil

1 1/4 cup Basmati Rice

1 Onion, large, thinly sliced

1 tbsp Juice of lemon

1/2 tsp Ginger, grated or finely chopped

3-4 cloves garlic, minced

1/4 tsp Red chilly flakes / powder

3-4 tbsp Tomato puree / Sauce

2 cups Vegetable stock

3-4 tbsp Fresh coriander, finely chopped

3 tbsp Golden corn (optional)

3 tbsp Green peas, fresh / frozen (optional)

 

WHAT TO DO

  • Heat oil in a large pan
  • Add the rice and onion and fry on medium high flame
  • Once the onion is translucent and the rice is slightly brown, reduce the flame
  • Add ginger, garlic, chilly flakes and juice of the lemon and mix well
  • Add tomato puree and mix
  • Pour the vegetable stock and add salt and the peas and corn, if using
  • Increase to high flame till the stock starts to boil
  • Reduce to low flame and cover to cook
  • It should take around 15-20 minutes to for the rice to cook
  • Check once or twice and add additional water if necessary
  • Fluff the rice with a fork and garnish with fresh coriander
  • Serve hot
  • Enjoy!

    Wish you and your family a very happy and healthy 2019 ahead! You are right – Bread being your forte, I had also expected a bread here today but I am equally glad to see another yummy recipe. Being a typical South Indian, I prefer rice over bread any day 😀
